One evening I was watching the food channel and one of the chefs was making Risotto. I asked myself whether the Arborio rice would take a little smoke and still perform well in the preparation of the dish. The result was wonderful. I hope you agree.

Smoked RisottoThe Arborio rice is put in our smoker for a short time using a mixture of hardwoods for the natural smoke. The rice takes on that characteristic caramel tinge and just enough aroma to know you are dealing with something special.
