Premium Jellies
I learned the art of jelly making from one the greats here in Ottawa, Big Bob Rouleau. We collaborated on a few of his products that required smoked ingredients. I have concentrated on clear jellies that get their aroma and flavour from infusing complementary ingredients.

Mulled PortPort Wine infused with Cloves, Cinnamon, Allspice and Coriander seeds
If you like port you will love this jelly. All the rich aroma and flavour of the Port with just a hint of the mulling spices.
Wonderful with game or foul. Think of it as adult cranberry sauce!
