Alaea is the traditional Hawaiian sea salt used to season and preserve. Harvested on the Hawaiian Island of Kauai, Alaea Hawaiian Sea Salt is non-processed and rich in trace minerals. A small amount of harvested volcanic reddish Hawaiian clay (alaea) enriches the salt with Iron-Oxide.
It is the traditional and authentic seasoning for native Hawaiian dishes such as Kalua Pig, Poke and Hawaiian Jerky. Alaea is also good on prime rib and pork loin.
Traditionally, Hawaiians used Alaea salt in ceremonies to cleanse, purify and bless tools and canoes, homes and temples; and also in healing rituals for medicinal purposes.

La Baleine is a naturally evaporated sea salt from France. These crystals crunch satisfyingly between your teeth and dissolve quickly.
This La Baleine, Salins du Midi, is a Mediterranean sea salt that has been produced in the Aigues-Mortes saltworks, in Camargue, France since 1856.
It is gathered from the salt-pan at Aigues-Mortes, a protected area covering some 10,800 hectares of untamed land, approximately the same size as inner-city Paris. On this natural site, where wildlife and flora remain untouched, salt has been gathered since antiquity when the Roman engineer, Peccius, was in charge of production.

Murray River salt crystals are light and delicate peach coloured flakes. They have a wonderfully mild flavour. The texture is ideal for use as a finishing salt. The crystals melt quickly and evenly making Murray River flake salt ideal for finishing, roasting, and baking.
The Murray River is the greatest of Australia's rivers. The source of its water is the snowy Australian Alps. Salt is a natural feature in many Australian landscapes. The Murray-Darling Basin’s low rainfall and high evaporation have combined to concentrate salt in the groundwater. This salt is produced naturally from the underground brines in the Murray Darling Basin. A red pigment, carotene, is secreted from the salt tolerant algae. The underground saline waters have been laying dormant for thousands of years. By using these waters the environment is improved and a beautiful salt is produced.

This Cambodian sea salt comes from the coastal region of Kampot. Shallow coastal fields are flooded with sea water from the Gulf of Thailand during high tide. The sea water is channelled from field to field for several days allowing the sun and wind to evaporate the water leaving salt to be hand raked into small white mountains. The large, fully developed sea salt crystals are preferred for cooking and roasting, they can also be milled or ground for exceptional finishing salts.
