Exotic Peppers
Peppercorns can come form all over the world. But there a few places that produce peppercorns renowned for their superior taste and aroma. India, Ceylon (Sri Lanka), Indonesia, Cambodia, Ecuador, The Seychelles; all these places provide us with unique products that enhance the flavour and enjoyment of the foods we eat.
We have started our collection with some of the classics like Tellicherry and have added very hard-to-get Kampot Peppercorns from Cambodia, together with the others listed below.

Black peppercorns from the Kampot coastal region of Cambodia, a region renowned for producing one of the world's finest peppers.
Famed for its strong yet delicate aroma, Kampot pepper can range from intensely spicy to mildly sweet. It has a very fresh aroma with hints of eucalyptus and it lingers on the palate. Its unique flavour is due to a combination of Kampot’s rich soil, the climate in this area which is between the mountains and the sea, and the experience of several generations of pepper farmers.

Certified organic Black peppercorns from the Malabar region of southwest India.
Tellicherry pepper is considered the most complex, balanced and elegant of the black peppers. It is actually a special type of Malabar Pepper which has been allowed to ripen completely so that it develops more flavour, sugar and size. Its aroma is sweet and spicy, its flavour is rich and bold. Pepper grown on Mt. Tellicherry in India is already considered some of that nation’s finest, but only the top 10% of it is named after the mountain.
These "TGSEB" (Tellicherry Garbled Special Extra Bold) are the highest grade of organic black peppercorns available, selected from only the plumpest berries–those that produce a rich and complex pepper flavour.

Certified organic White peppercorns from Ceylon.
White peppercorns come from the same plant as black peppercorns, and once fully ripe, the outer hulls are removed from the pepper berries, leaving the distinctive light coloured inner core. White pepper’s light colour and subtle taste are especially suited to white sauces.
Use anywhere a milder, finer pepper flavour is desired. Add at the end of cooking to retain full flavour.

Not a true peppercorn, Szechwan pepper is the outer pod of the tiny fruit of a small tree commonly known as Prickly Ash (Zanthoxylum piperitum) widely grown and consumed in Asia as a spice.
This gourmet Szechwan pepper is grown in China and offers a warm pepper like aroma, and an unusual, pungent flavour that begins as warm and citrus with woodsy overtones, and finishes with a surprising numbing effect on the tongue. Its complex and unusual flavour can be used to intensify the flavour of fish, meat, poultry, cheese and vegetables. Substitute Szechwan pepper for black pepper to add an exotic twist to recipes.
