Tuscan Pork Tenderloin
Ingredients
- 2 pork tenderloins, about 1.5 lbs (700 g) each
- 0.75 cup dijon mustard
- 3-4 tbsp Salty Don’s Tuscan Smoke
- 6-8 slices bacon
Trim silverskin and excess fat from tenderloins and pat dry.
Place the tenderloins side by side in a greased baking tray or ovenproof dish.
Spread dijon mustard over tenderloins, coating fairly thickly. Sprinkle Tuscan Smoke over top of the dijon coating and press in to adhere.
Wrap each tenderloin with 3 or 4 strips of bacon, wrapping around the tenderloin in a spiral fashion. Secure with toothpicks if necessary.
Cover and refrigerate for at least one hour, up to four hours.
Bake the tenderloins in a 375°F oven for 45-60 minutes, to an internal temperature of 160°F.
