Easy Peasy Beef Curry

This is Susan’s adaptation of Easy Peasy Ground Beef Curry from Meena Landon-Browne of Taste of The Raj

Ingredients

serves 4-6

  • 1.5 lb ground beef
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 lg onion, chopped
  • 1 tbsp minced garlic
  • 2 tsp minced ginger
  • 2 or 3 tbsp Salty Don’s Canadian Curry *
  • 1 tsp chili powder (optional) *
  • 0.5 cup raisins/sultanas (optional)
  • 0.5 cup water, wine, or stock (optional)
  • 1 small can diced tomatoes
  • 1 cup frozen peas
  • chopped fresh coriander

* Salty Don’s Canadian Curry is a mild blend. If you like a more intense flavour increase the amount of Canadian Curry; and/or for more heat add chili powder to your taste.

In a large skillet, heat the oil and butter and saute the onion, garlic and ginger until onion is lightly caramelized. Add Salty Don’s Canadian Curry and chilli powder and stir for 3-4 minutes.

Add raisins/sultanas (if using) and stir for another 2-3 minutes. If mixture is very dry, add a little water, wine or stock.

Add the ground beef, mix well and stir occasionally until browned. When beef is browned, stir in the tomatoes and let simmer for 10 minutes. Add the peas and heat through.

Place the curry in a serving dish and sprinkle with the coriander.

Serve with rice, naan, and chutney or raita.
